Once upon a time, in a small village, there was a young apprentice who worked in an exquisite cake shop, where the chef was well known for his demanding nature, his expertise and knowledge.
One day, the apprentice inadvertently poured some milk into the chocolate. The chef was furious and wanted to tell the apprentice off, but the only thing he managed to shout at him was : « Espèce de Ganache ! ».
The legend tells that from that moment on, the chef added chololate with milk and got a surprisingly unctuous and very tasty mixture of chocolate and cream, cleverly balanced. This mixture makes an unctuous filling for chocolate sweets.
